Zubereitung:
- Süßkartoffel grob schälen, würfeln, in leicht gesalzenem Wasser garen, abkühlen lassen.
- Für den Tomatensalat Fleischtomaten waschen, in Scheiben schneiden und mit Oliven, Olivenöl, Zitronensaft, Salz und Pfeffer vermischen.
- Frühlingszwiebel und Petersilie waschen und grob hacken.
- Sardellenfilets abtropfen, Knoblauch grob hacken, mit den restlichen Zutaten für die Sardellencreme vermengen. Fein pürieren, mit Salz, Pfeffer und Muskatnuss abschmecken.
- Die Greek Flatbreads grillen, währenddessen je zwei Schinken übereinander legen und einen EL Sardellencreme auf die Oberseite auftragen, zu kleinen Rollen klappen und mit Holzspießen pikieren.
- Auf die gegrillten Greek Flatbreads den Tomatensalat aufteilen und mit Frühlingszwiebeln, Petersilie und den Schinken-Involtini garnieren.
